Frog legs

For decades frog legs are on the menu in restaurants. Sometimes the frog legs are imported, sometimes they are local species. For example the region of Lyon in France is well known for it dishes with frog legs.

Of course not all frog species can be used. At the contrary, there are very strict rules and many species are protected. Presentation wise there are 2 options: either the straight classical style or the bended yoga style. Most frog legs originate from Indonesia or Vietnam.

The meat slightly resembles poultry and allows combinations with various spices and herbs, even when frog legs in garlic sauce are the classic. Important for the quality of the product is the meat content.
